Hawaiian Bliss Roasted Chicken

Ingredients

  • 1 whole chicken (4–5 lb)
  • 1 cup pineapple juice
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 2 tablespoons melted butter or olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger (or 1/2 tsp ground)
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Optional: pineapple slices, bell peppers, red onion

Instructions

  1. Preheat oven
    • Preheat to 375°F (190°C).
  2. Make the Hawaiian glaze
    • Whisk pineapple juice, soy sauce, brown sugar, honey, butter, garlic, ginger, paprika, and black pepper.
  3. Prep the chicken
    • Pat chicken dry.
    • Place in a roasting pan or baking dish.
    • Brush generously with glaze (reserve some for basting).
  4. Roast
    • Roast uncovered for 60–75 minutes, basting every 20 minutes.
    • Add pineapple slices and vegetables during the last 30 minutes if using.
  5. Finish
    • Chicken is done when internal temp reaches 165°F (74°C).
    • Broil 2–3 minutes at the end for extra caramelization (optional).
  6. Rest & Serve
    • Rest 10 minutes before carving.
    • Spoon pan juices over chicken.

Serving Ideas

  • Serve with coconut rice, macaroni salad, or roasted sweet potatoes
  • Drizzle extra glaze over rice or vegetables

Tips

  • For extra flavor, marinate chicken in glaze for 4–8 hours before roasting.
  • Works great with chicken thighs or drumsticks too.
