Honey Butter Smashed Potatoes

Ingredients (Serves 4)

  • 1½ lbs (700 g) baby potatoes (Yukon gold or red)
  • 3 tbsp butter, melted
  • 2 tbsp honey
  • 2 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • Optional: garlic powder, fresh herbs (parsley or thyme)

Instructions

  1. Boil potatoes
    • Place potatoes in salted water.
    • Boil 15–20 minutes until fork-tender.
    • Drain and let steam dry for 5 minutes.
  2. Preheat oven
    • Heat oven to 425°F (220°C).
    • Line a baking sheet with parchment paper.
  3. Smash potatoes
    • Place potatoes on the sheet.
    • Gently smash each with a glass or spatula.
  4. Honey butter glaze
    • Mix melted butter, honey, olive oil, salt, and pepper.
    • Brush generously over smashed potatoes.
  5. Bake
    • Roast for 25–30 minutes, flipping once, until golden and crispy.
  6. Finish
    • Optional: brush with extra honey butter and sprinkle herbs.
    • Serve hot.

Tips for Extra Crispiness

  • Let potatoes dry before smashing
  • Use parchment or a well-oiled pan
  • Roast on the upper oven rack
  • Add grated parmesan in the last 5 minutes for a savory twist
