Kielbasa Potato Soup

Ingredients

  • 1 lb kielbasa sausage, sliced into ¼-inch rounds
  • 4–5 medium potatoes, peeled and diced
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • 2 tablespoons butter or olive oil
  • 2 carrots, diced (optional)
  • 2 stalks celery, diced (optional)
  • 1 teaspoon smoked paprika (optional)
  • Salt & pepper, to taste
  • Optional garnish: chopped parsley or shredded cheese

Instructions

  1. Cook sausage: In a large pot, sauté kielbasa slices over medium heat until browned. Remove and set aside.
  2. Cook vegetables: In the same pot, add butter or oil. Sauté onion, garlic, carrots, and celery (if using) until softened.
  3. Add potatoes & broth: Stir in diced potatoes, paprika, salt, and pepper. Pour in chicken broth. Bring to a boil, then reduce heat and simmer 15–20 minutes until potatoes are tender.
  4. Blend slightly (optional): For a creamier texture, mash some of the potatoes with a potato masher or use an immersion blender briefly.
  5. Add cream & sausage: Stir in heavy cream and cooked kielbasa. Simmer 5–7 minutes until heated through. Adjust seasoning.
  6. Serve: Garnish with parsley or cheese, and serve hot with crusty bread.

Tips

  • Use smoked kielbasa for a richer, smoky flavor.
  • Add bacon for extra depth.
  • For a thicker soup, add 1–2 tablespoons flour or cornstarch to the broth before adding cream.
