Pan-Seared Lamb Chops

Ingredients (Serves 2–3)

  • 4–6 lamb chops (about ½–¾ inch thick)
  • 2 tbsp olive oil
  • 2–3 cloves garlic, minced
  • 1 tsp rosemary (fresh or dried)
  • 1 tsp thyme (optional)
  • Salt & black pepper, to taste
  • 1 tbsp butter (optional, for extra richness)

Instructions

  1. Prepare lamb
    • Pat chops dry and season both sides with salt, pepper, rosemary, and thyme.
    • Let sit at room temperature for 15–20 minutes before cooking.
  2. Heat pan
    • Heat olive oil in a skillet over medium-high heat.
  3. Cook lamb
    • Add lamb chops to hot pan.
    • Cook 3–4 minutes per side for medium-rare, or longer depending on thickness and desired doneness.
    • Optional: during the last minute, add butter and garlic to the pan and spoon over chops for extra flavor.
  4. Rest
    • Remove from pan and let lamb rest 5 minutes before serving.

Tips

  • For a grilled flavor, cook chops on a hot grill for 3–4 minutes per side.
  • Pair with roasted vegetables, mashed potatoes, or a fresh salad.
