1️⃣ Make the crust

  1. Combine flour and salt in a bowl.

  4. Roll out dough and fit into a 9-inch pie pan.
  5. Prick bottom with a fork, bake 350°F (175°C) for 15–20 min until lightly golden. Cool.

  5. Slowly whisk a small amount of hot mixture into egg yolks, then return all to the saucepan.
  6. Cook 2 more minutes, stirring constantly. Pour into baked pie crust.

3️⃣ Make the meringue

  1. Beat egg whites with cream of tartar until foamy.
  2. Gradually add sugar while beating until stiff peaks form.

  1. Spread meringue over hot lemon filling, sealing edges to the crust.
  2. Bake 350°F (175°C) for 10–12 min until meringue is golden brown.
