Here’s a simple, crispy, and delicious recipe for Mashed Potato Cakes 🥔🧈 — perfect as a side dish or snack.

Mashed Potato Cakes

Servings: 4–6
Time: ~25–30 minutes

Ingredients

  • 2 cups leftover mashed potatoes (plain or lightly seasoned)
  • ½ cup shredded cheese (cheddar, mozzarella, or your choice)
  • 1 egg
  • ¼ cup all-purpose flour (more if needed)
  • 2–3 green onions or chives, chopped (optional)
  • Salt & pepper, to taste
  • 2–3 tbsp oil or butter for frying

Optional Add-ins

  • Cooked bacon bits
  • Herbs (parsley, thyme, dill)
  • Minced garlic

Instructions

  1. Mix ingredients
    • In a bowl, combine mashed potatoes, egg, cheese, green onions, flour, salt, and pepper.
    • The mixture should hold together; add more flour if too soft.
  2. Shape cakes
    • Form mixture into small patties, about 2–3 inches in diameter.
  3. Cook
    • Heat oil or butter in a skillet over medium heat.
    • Fry patties 3–4 minutes per side until golden brown and crispy.
  4. Serve
    • Serve warm with sour cream, ketchup, or your favorite dipping sauce.

Tips & Variations

  • Crispier cakes: Coat patties lightly in breadcrumbs before frying.
  • Cheesy twist: Fold in different cheeses or a small cube of cheese in the center for a gooey core.
  • Baked option: Arrange on a greased baking sheet and bake at 400°F (200°C) for 15–20 minutes, flipping halfway.

I can also give you a stuffed mashed potato cake version with meat, veggies, or cheese inside for extra flavor.

Do you want me to give that version?
