Instructions

1. Preheat Oven

  • Preheat oven to 375°F (190°C).
  • Lightly grease a 9×13-inch baking dish.

2. Cook the Meat

  1. In a skillet over medium heat, brown ground beef and onion until fully cooked.
  2. Drain excess fat.
  3. Stir in taco seasoning and water.
  4. Simmer 5 minutes until thickened.

3. Assemble the Lasagna

  1. Spread a thin layer of salsa on the bottom of the baking dish.
  2. Add a layer of tortillas (tear to fit).
  3. Spread a layer of taco meat.
  4. Sprinkle black beans and corn.
  5. Add a layer of shredded cheese.
  6. Repeat layers until ingredients are used, finishing with tortillas, salsa, and cheese on top.

4. Bake

  • Cover with foil and bake 25 minutes.
  • Remove foil and bake another 10–15 minutes, until cheese is bubbly and slightly golden.

5. Rest & Serve

  • Let sit 10 minutes before slicing.
