Oatmeal Flax Bread
Ingredients
- 2¼ teaspoons active dry yeast (1 packet)
- 1 cup warm water (about 110°F / warm, not hot)
- 2 tablespoons honey or sugar
- 2 tablespoons olive oil or melted butter
- 1 cup rolled oats (old-fashioned)
- ⅓ cup ground flaxseed (flax meal)
- 1 teaspoon salt
- 2½–3 cups all-purpose or bread flour
Instructions
- Activate yeast: In a large bowl, mix warm water, honey, and yeast. Let sit 5–10 minutes until foamy.
- Add ingredients: Stir in oil, oats, flaxseed, salt, and 2½ cups flour.
- Knead: Knead by hand or mixer until dough is soft and slightly tacky, adding more flour if needed.
- First rise: Place dough in a greased bowl, cover, and let rise 1 hour or until doubled.
- Shape: Punch down dough and shape into a loaf. Place in a greased loaf pan.
- Second rise: Cover and rise 30–45 minutes until just above the pan.
- Bake at 375°F (190°C) for 30–35 minutes, until golden and sounds hollow when tapped.
- Cool completely before slicing.
