Pork Chops with Potatoes in Creamy Sauce

Ingredients

  • 4 bone-in or boneless pork chops
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or butter
  • 3–4 medium potatoes, peeled and sliced thinly
  • 1 small onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 teaspoon dried thyme or rosemary
  • ½ cup grated Parmesan or shredded cheese (optional)

Instructions

1. Prepare Pork Chops

  1. Season pork chops with salt and pepper.
  2. Heat oil or butter in a skillet over medium-high heat.
  3. Sear pork chops 3–4 minutes per side until golden. Remove and set aside.

2. Cook Potatoes & Onions

  1. In the same skillet, add onions and garlic, sauté 2–3 minutes.
  2. Add sliced potatoes and cook for another 3–4 minutes, stirring occasionally.

3. Make the Creamy Sauce

  1. Pour in chicken broth and bring to a simmer.
  2. Stir in heavy cream and thyme/rosemary. Let simmer 5–7 minutes until slightly thickened.
  3. Season with salt and pepper to taste.

4. Combine & Cook

  1. Return pork chops to the skillet, nestling them among the potatoes.
  2. Cover and simmer on low heat 10–15 minutes, until pork chops are cooked through and potatoes are tender.
  3. Optional: sprinkle cheese on top and cover until melted.

5. Serve

  • Serve hot with a spoonful of creamy sauce over the pork and potatoes.

Tips

  • Use thin-sliced potatoes for faster cooking, or pre-boil for 5 minutes.
  • Bone-in pork chops stay juicier, but boneless work fine too.
  • Add vegetables like carrots or peas to make it a one-pan meal.
