Sausage and Potato Casserole

Ingredients (Serves 4–6)

  • 1 lb (450 g) sausages (pork, chicken, or turkey)
  • 4–5 potatoes, peeled and sliced thin
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 cup cheese (cheddar or mozzarella), grated
  • 1 cup milk or cream (or half-and-half)
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika or Italian seasoning
  • Optional: peas, bell peppers, or spinach

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Brown the sausages
    • Heat oil in a pan and brown sausages on all sides (don’t fully cook).
    • Slice into chunks and set aside.
  3. Layer the casserole
    • Add a layer of sliced potatoes to the dish.
    • Top with onion, garlic, sausage pieces, seasoning, and a little cheese.
    • Repeat layers until everything is used.
  4. Add liquid
    • Pour milk or cream evenly over the casserole.
  5. Bake
    • Cover with foil and bake 40 minutes.
    • Remove foil, add remaining cheese, and bake 15–20 minutes until golden and potatoes are tender.
  6. Rest & serve
    • Let sit 5 minutes before serving.

Tips & Variations

  • For extra flavor, add a spoon of mustard or herbs to the milk.
  • Use sweet potatoes for a slightly sweeter twist.
  • Swap cream for milk to make it lighter.
  • Add veggies to boost nutrition without changing the taste much.
