🍤 Shrimp Ceviche

Ingredients (serves 3–4)

Shrimp

  • 1 lb (450 g) medium shrimp, peeled & deveined
  • Juice of 6–8 limes (enough to fully cover shrimp)
  • Salt to taste

Mix-ins

  • 1/2 cup red onion, finely diced
  • 1 cup diced tomato
  • 1/2 cup cucumber, diced
  • 1/2 cup chopped cilantro
  • 1–2 jalapeños, finely chopped (optional)
  • 1 ripe avocado, diced

Seasoning

  • Juice of 1 lemon or orange (optional for balance)
  • Black pepper to taste

Instructions

1️⃣ Prep shrimp

  • Chop shrimp into small bite-size pieces.
  • Place in a glass bowl and cover completely with lime juice.
  • Add a pinch of salt.

2️⃣ “Cook” in citrus

  • Cover and refrigerate 20–30 minutes, stirring once, until shrimp turns opaque and pink.

3️⃣ Drain & mix

  • Drain off most (not all) of the lime juice.
  • Add onion, tomato, cucumber, cilantro, jalapeño, and citrus juice if using.

4️⃣ Finish

  • Gently fold in avocado.
  • Taste and adjust salt and heat.

5️⃣ Serve

  • Chill 10 minutes, then serve cold with tostadas, tortilla chips, or crackers.
