  • 1-inch piece ginger, minced
  • 2 tbsp soy sauce

Protein & Toppings

  • 1 kielbasa sausage, sliced into 1/2-inch rounds
  • 8–10 medium shrimp, peeled & deveined
  • 2 large eggs
  • 1 cup vegetables (bok choy, spinach, carrots, or mushrooms)
  • Garnishes: green onions, cilantro, sesame seeds, chili flakes

Oil

  • 1–2 tbsp vegetable or olive oil

Instructions

1️⃣ Soft-boil eggs

  1. Bring water to a gentle boil.
  2. Carefully add eggs and cook 6–7 minutes for slightly runny yolks.
  3. Transfer eggs to ice water to stop cooking. Peel and set aside.

2️⃣ Cook noodles

  • Cook noodles according to package instructions. Drain and set aside.

3️⃣ Sear proteins

  1. Heat oil in a skillet over medium-high heat.
  2. Sear kielbasa slices until lightly browned (2–3 minutes per side). Remove and set aside.
  3. In the same skillet, sear shrimp until pink and opaque (~2 minutes per side). Remove and set aside.

4️⃣ Prepare spicy broth

  1. In a pot, heat a small drizzle of oil over medium heat.
  2. Sauté garlic and ginger for 30 seconds until fragrant.
  3. Add chicken/vegetable broth, soy sauce, chili paste, sesame oil, and optional rice vinegar/lime. Bring to a gentle simmer.
