Stuffed Pepper Soup Recipe

Ingredients:

  • 1 lb (450 g) ground beef or turkey
  • 1 medium onion, chopped
  • 2–3 bell peppers (red, green, or a mix), chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef or vegetable broth
  • 1 cup uncooked rice (or ½ cup if you want less thick soup)
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions:

  1. Brown the meat: In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. Add veggies: Stir in the chopped onion, bell peppers, and garlic. Cook for 5–7 minutes until softened.
  3. Add liquids and seasonings: Pour in the diced tomatoes (with juice) and broth. Add Italian seasoning, paprika, salt, and pepper.
  4. Add rice: Stir in the uncooked rice. Bring the soup to a boil, then reduce heat to a simmer. Cover and cook for 20–25 minutes, or until the rice is tender.
  5. Taste and adjust: Check seasoning and adjust salt/pepper as needed.
  6. Serve: Ladle into bowls and sprinkle with fresh parsley.

Tips:

  • For extra cheesy flavor, stir in a handful of shredded cheese before serving.
  • You can swap rice for quinoa for a healthier twist.
  • If you like a thicker soup, simmer a little longer or mash some of the tomatoes into the broth.
