Hearty, cozy, and tastes just like stuffed peppers without the work 🫑🍲
Here’s a classic Stuffed Pepper Soup—easy, filling, and perfect for leftovers.


🫑 Stuffed Pepper Soup

Ingredients (Serves 6–8)

  • 1 lb ground beef (or turkey)
  • 1 medium onion, diced
  • 2–3 cloves garlic, minced
  • 3 bell peppers (any colors), diced
  • 1 (28 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 6 cups beef or chicken broth
  • 1 cup cooked rice (white or brown)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Optional: pinch of red pepper flakes

Instructions

  1. Brown the Meat
    In a large pot, brown ground beef with onion until fully cooked. Drain excess fat. Add garlic and cook 30 seconds.
  2. Add Veggies & Tomatoes
    Stir in diced bell peppers, tomatoes, and tomato sauce.
  3. Simmer
    Pour in broth and seasonings. Bring to a boil, then reduce heat and simmer 25–30 minutes until peppers are tender.
  4. Add Rice
    Stir in cooked rice and heat through (5 minutes).
  5. Serve
    Taste and adjust seasoning. Serve hot.

⭐ Tips & Variations

  • Crockpot: Brown meat first, then cook on LOW 6–8 hrs (add rice near the end)
  • Low-carb: Skip rice or use cauliflower rice
  • Extra hearty: Add another ½ lb meat
  • Cheesy: Top with shredded cheddar or mozzarella
  • Tomato-rich: Add a splash of V8 or extra sauce
