🫑 Stuffed Pepper Soup
Ingredients (Serves 6–8)
- 1 lb ground beef (or turkey)
- 1 medium onion, diced
- 2–3 cloves garlic, minced
- 3 bell peppers (any colors), diced
- 1 (28 oz) can diced tomatoes
- 1 (15 oz) can tomato sauce
- 6 cups beef or chicken broth
- 1 cup cooked rice (white or brown)
- 1 tsp salt (adjust to taste)
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ½ tsp paprika
- Optional: pinch of red pepper flakes
Instructions
- Brown the Meat
In a large pot, brown ground beef with onion until fully cooked. Drain excess fat. Add garlic and cook 30 seconds. - Add Veggies & Tomatoes
Stir in diced bell peppers, tomatoes, and tomato sauce. - Simmer
Pour in broth and seasonings. Bring to a boil, then reduce heat and simmer 25–30 minutes until peppers are tender. - Add Rice
Stir in cooked rice and heat through (5 minutes). - Serve
Taste and adjust seasoning. Serve hot.
