Here’s a fully loaded Bacon Cheeseburger Meatloaf recipe — all the flavors of a cheeseburger baked into a hearty, cheesy loaf.

Ingredients

Meatloaf

  • 2 lbs ground beef (80/20 for best flavor)
  • 1 cup breadcrumbs
  • 2 eggs
  • ½ cup milk
  • ½ small onion, finely diced
  • 2 cloves garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Cheese & Bacon

  • 1½ cups shredded cheddar or American cheese
  • 8–10 slices bacon, uncooked

Glaze (Optional but Recommended)

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon mustard

Instructions

  1. Preheat Oven
    • Preheat to 375°F (190°C). Grease a 9×5-inch loaf pan or line a baking sheet with foil.
  2. Mix Meatloaf
    • In a large bowl, combine ground beef, breadcrumbs, eggs, milk, onion, garlic, ketchup, mustard, Worcestershire sauce, salt, and pepper.
    • Mix gently until combined (don’t overmix to keep meatloaf tender).
  3. Add Cheese
    • Press half of the meat mixture into loaf shape.
    • Sprinkle cheese evenly on top.
    • Cover with remaining meat mixture, sealing edges over cheese.
  4. Top with Bacon
    • Lay bacon slices over the top, tucking ends underneath the loaf.
  5. Add Glaze
    • Mix glaze ingredients and brush over the bacon/meatloaf.
  6. Bake
    • Bake 55–65 minutes, or until internal temperature reaches 160°F (71°C).
    • Optional: Broil 3–5 minutes at the end to crisp bacon.
  7. Rest & Serve
    • Let meatloaf rest 10 minutes before slicing.
    • Serve with mashed potatoes, roasted vegetables, or even on buns for a meatloaf sandwich.

Optional Enhancements

  • Add diced pickles or caramelized onions inside for extra flavor.
  • Swap cheddar for pepper jack for a spicy twist.
  • Drizzle extra glaze on slices for a “burger sauce” effect.
