Here’s a tasty, kid-friendly, and quick recipe for Cheesy Carrot Flatbreads — soft, flavorful, and packed with a subtle veggie boost.

🥕🫓 Cheesy Carrot Flatbreads

Ingredients (makes 4–6 flatbreads)

  • 1 cup grated carrot (about 2 medium carrots)
  • 2 cups all-purpose flour (plus extra for rolling)
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 tsp garlic powder or dried herbs (optional)
  • 2 tbsp olive oil (plus extra for cooking)
  • ¾ cup shredded cheese (cheddar, mozzarella, or a mix)
  • ⅔ cup water (adjust as needed)

Instructions

1️⃣ Make the dough

  1. In a bowl, mix flour, baking powder, salt, and garlic/herbs.
  2. Stir in grated carrot and shredded cheese.
  3. Add olive oil and water gradually, mixing until a soft dough forms.
  4. Knead lightly for 2–3 minutes. If dough is sticky, sprinkle a little flour.
  5. Cover and let rest for 10–15 minutes.

2️⃣ Shape the flatbreads

  • Divide dough into 4–6 equal portions.
  • Roll each portion into a thin circle or oval (about ¼ inch thick).

3️⃣ Cook the flatbreads

  • Heat a skillet or nonstick pan over medium heat.
  • Brush lightly with olive oil.
  • Cook each flatbread 2–3 minutes per side, until golden brown and cheese is melted.

4️⃣ Serve

  • Serve warm as a snack, side, or with dips like hummus, yogurt sauce, or marinara.
  • Optional: sprinkle fresh herbs or a little extra cheese on top before serving.

🔹 Tips & Variations

  • Spicy version: add chili flakes or smoked paprika.
  • Herby flavor: mix in finely chopped parsley, cilantro, or rosemary.
  • Gluten-free: use a 1:1 gluten-free flour blend.
  • Extra cheesy: fold some cheese inside the dough for a gooey center.

If you want, I can also give a quick 15-minute version of cheesy carrot flatbreads for busy weeknights — no resting time needed.

Do you want me to do that?
