Cherry pie bars

Here’s a simple, delicious recipe for Cherry Pie Bars — like cherry pie, but easier to make and perfect for sharing.


🍒 Cherry Pie Bars

Ingredients

Crust & Topping

  • 1 cup (226g) unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon salt

Filling

  • 2 cans (21 oz each) cherry pie filling (or homemade)

Optional Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Make the dough:
    Cream butter and sugar until light and fluffy.
    Beat in eggs one at a time, then add vanilla.
    Mix in flour and salt until just combined.
  3. Form the base:
    Spread about ⅔ of the batter evenly into the prepared pan.
  4. Add filling:
    Spread cherry pie filling evenly over the crust.
  5. Top it:
    Drop remaining batter in spoonfuls over the filling (it doesn’t need to fully cover).
  6. Bake:
    35–40 minutes, or until golden brown.
  7. Cool completely.
    If using glaze, whisk ingredients together and drizzle over cooled bars.
  8. Slice & serve.

Tips

  • For extra flavor, add ½ teaspoon almond extract to the batter.
  • Use homemade cherry filling if you prefer less sweetness.
  • These bars store well in the fridge for up to 5 days.
