Cucumber and Tomato Salad

Ingredients (Serves 2–4)

  • 2 large cucumbers, sliced (or 1 English cucumber, thinly sliced)
  • 3–4 ripe tomatoes, chopped or sliced
  • ½ red onion, thinly sliced (optional)
  • 2 tbsp olive oil
  • 1–2 tsp red wine vinegar or lemon juice
  • Salt & black pepper, to taste
  • Optional: fresh herbs like basil, parsley, or dill
  • Optional: crumbled feta cheese

Instructions

  1. Prep veggies
    • Slice cucumbers and tomatoes into bite-sized pieces.
    • Thinly slice red onion if using.
  2. Make dressing
    • In a small bowl, whisk together olive oil, vinegar or lemon juice, salt, and pepper.
  3. Toss
    • In a large bowl, combine cucumbers, tomatoes, and onion.
    • Pour dressing over salad and toss gently.
  4. Add extras
    • Sprinkle fresh herbs and/or feta cheese on top.
  5. Serve
    • Chill 10–15 minutes if desired, then serve fresh.

Tips

  • Use seedless cucumbers to reduce extra water.
  • For extra flavor, add sliced avocado, olives, or a pinch of garlic powder.
  • This salad is best eaten the same day, as tomatoes release juice over time.
