Double Chocolate Coca-Cola Cake

Ingredients

For the cake:

  • 2 cups all-purpose flour
  • 2 cups sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup unsweetened cocoa powder
  • ½ cup butter (1 stick)
  • 1 cup Coca-Cola (not diet)
  • ½ cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract

For the frosting:

  • ½ cup butter
  • ¼ cup unsweetened cocoa powder
  • 6 tbsp Coca-Cola
  • 3 cups powdered sugar
  • ½ cup chopped pecans or walnuts (optional)

Instructions

Cake

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Mix dry ingredients
    • In a large bowl, combine flour, sugar, cocoa, baking soda, and salt.
  3. Heat butter & Coca-Cola
    • In a small saucepan, melt butter with Coca-Cola over low heat.
  4. Combine wet & dry
    • Pour butter-Coke mixture into dry ingredients. Add eggs, buttermilk, and vanilla. Mix until smooth.
  5. Bake
    • Pour batter into prepared pan and bake 30–35 minutes, or until a toothpick comes out clean.

Frosting

  1. Melt butter & cocoa
    • In a saucepan, melt butter, add cocoa powder and Coca-Cola. Bring to a boil, then remove from heat.
  2. Add powdered sugar
    • Stir in powdered sugar until smooth. Add nuts if desired.
  3. Frost cake
    • Pour warm frosting over hot cake so it soaks in and creates a rich glaze.

Tips

  • Use full-sugar Coca-Cola; it helps create a moist cake.
  • Let cake cool slightly before frosting if you prefer a thicker layer.
  • Top with chocolate chips or sprinkles for extra fun.
