🥘 Ground Beef and Potato Casserole

Ingredients (Serves 6–8)

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2–3 cloves garlic, minced
  • 4–5 medium potatoes, peeled and thinly sliced
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 can (10.5 oz) cream of mushroom or cream of chicken soup
  • ½ cup milk
  • 1 tsp paprika
  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)
  • 2 tbsp olive oil or butter
  • Optional: chopped parsley for garnish

Instructions

1️⃣ Preheat oven

  • Preheat oven to 375°F (190°C).
  • Grease a 9×13-inch baking dish.

2️⃣ Cook the beef

  • In a skillet, heat olive oil over medium heat.
  • Sauté onion and garlic until soft.
  • Add ground beef and cook until browned. Drain excess fat.
  • Season with salt, pepper, and paprika.

3️⃣ Prepare the sauce

  • In a bowl, mix cream of mushroom (or chicken) soup with milk until smooth.
  • Set aside.

4️⃣ Assemble the casserole

  1. Layer half of the sliced potatoes in the bottom of the baking dish.
  2. Spread half of the cooked beef mixture over the potatoes.
  3. Pour half of the soup mixture over the beef.
  4. Repeat layers with remaining potatoes, beef, and soup.
  5. Top with shredded cheese.

5️⃣ Bake

  • Cover with foil and bake for 35–40 minutes.
  • Remove foil and bake another 15 minutes until potatoes are tender and cheese is golden.

6️⃣ Serve

  • Let casserole rest 5–10 minutes before serving.
  • Garnish with chopped parsley if desired.
