Oooh yes 🍋 lemon loaf—bright, soft, and dangerously snackable.

Here’s a moist, bakery-style lemon loaf that tastes like it came from a café but is super doable at home:


🍋 Lemon Loaf

Ingredients

Loaf

  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¾ cup sugar
  • 2 large eggs
  • ½ cup oil or melted butter
  • ½ cup milk or yogurt (Greek yogurt = extra moist)
  • Zest of 2 lemons
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract

Lemon Glaze

  • 1 cup powdered sugar
  • 2–3 tbsp lemon juice

How to Make It

  1. Prep
    • Heat oven to 350°F (175°C)
    • Grease or line a loaf pan
  2. Dry bowl
    • Whisk flour, baking powder, and salt.
  3. Wet bowl
    • Whisk sugar and eggs until pale.
    • Add oil/butter, milk/yogurt, lemon zest, juice, and vanilla.
  4. Combine
    • Fold dry into wet just until combined (don’t overmix).
  5. Bake
    • Pour into pan.
    • Bake 45–55 minutes, until a toothpick comes out mostly clean.
  6. Glaze
    • Let loaf cool 10–15 minutes.
    • Mix glaze and drizzle over warm loaf so it soaks in a bit 🤌

Little upgrades (if you’re feeling fancy)

  • Add poppy seeds
  • Swap milk for sour cream
  • Brush loaf with lemon syrup (lemon juice + sugar) before glazing
  • Finish with a pinch of flaky salt on top

Perfect with coffee, tea, or standing at the counter “just cutting a slice” that turns into three 😄
