🍪 Oatmeal Pecan Raisin Cookies

Soft, chewy, and packed with texture — sweet raisins + crunchy pecans make these a classic comfort cookie.

🥣 Ingredients (Makes ~24 cookies)

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ½ tsp salt
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins
  • 1 cup chopped pecans

👩‍🍳 Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter & sugars until light and fluffy.
  3. Beat in eggs one at a time, then add vanilla.
  4. In a separate bowl, whisk flour, baking soda, cinnamon, and salt.
  5. Gradually mix dry ingredients into wet ingredients.
  6. Stir in oats, raisins, and pecans.
  7. Scoop tablespoon-sized dough balls onto baking sheet (about 2 inches apart).
  8. Bake 10–12 minutes until edges are golden and centers look just set.
  9. Cool 5 minutes on the pan, then transfer to a rack.

  • Chewier cookies: Slightly underbake.
  • Crispier cookies: Bake 1–2 minutes longer.
  • Extra flavor: Toast pecans for 5–7 minutes before mixing in.
