Pecan Muffins
Makes: 12 muffins

Ingredients
- 1¾ cups all-purpose flour
- ½ cup sugar (white or brown)
- 2 tsp baking powder
- ½ tsp salt
- ½ tsp cinnamon (optional)
- ½ cup chopped pecans
Wet Ingredients
- ¾ cup milk
- ⅓ cup oil or melted butter
- 1 egg
- 1 tsp vanilla extract
Instructions
- Preheat oven
375°F (190°C). Line or grease a muffin tin. - Mix dry ingredients
Combine flour, sugar, baking powder, salt, cinnamon, and pecans. - Mix wet ingredients
Whisk milk, oil, egg, and vanilla. - Combine
Stir wet into dry just until mixed (don’t overmix). - Bake
Fill muffin cups ¾ full.
Bake 18–22 minutes until golden and a toothpick comes out clean. - Cool
