Pecan muffins

Here’s a simple, moist Pecan Muffins recipe 🧁🌰
Lightly sweet, nutty, and perfect for breakfast or a snack.


Pecan Muffins

Makes: 12 muffins
Time: ~30 minutes

Ingredients

  • 1¾ cups all-purpose flour
  • ½ cup sugar (white or brown)
  • 2 tsp baking powder
  • ½ tsp salt
  • ½ tsp cinnamon (optional)
  • ½ cup chopped pecans

Wet Ingredients

  • ¾ cup milk
  • ⅓ cup oil or melted butter
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven
    375°F (190°C). Line or grease a muffin tin.
  2. Mix dry ingredients
    Combine flour, sugar, baking powder, salt, cinnamon, and pecans.
  3. Mix wet ingredients
    Whisk milk, oil, egg, and vanilla.
  4. Combine
    Stir wet into dry just until mixed (don’t overmix).
  5. Bake
    Fill muffin cups ¾ full.
    Bake 18–22 minutes until golden and a toothpick comes out clean.
  6. Cool
    Let cool 5 minutes before removing.

Optional Topping

Sprinkle tops with brown sugar + chopped pecans before baking for a crunchy top.

Tips & Variations

  • Toast pecans first for deeper flavor.
  • Add maple syrup (replace ¼ cup sugar) for maple-pecan muffins.
  • Add a drizzle of honey butter after baking.
