🍰 Upside-Down Cake

An upside-down cake is a dessert baked with fruit and sugar at the bottom of the pan, which becomes the top when inverted after baking. The caramelized fruit topping gives it a sweet, glossy finish and a moist texture. Pineapple is the most classic choice, but apples, peaches, or berries also work.


🥣 Ingredients (Classic Pineapple Version, Serves 8)

For the topping:

  • ¼ cup butter
  • ½ cup brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • Maraschino cherries (optional, for decoration)

For the cake:

  • 1½ cups all-purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • ¼ tsp salt
  • ½ cup butter, softened
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract

👩‍🍳 Instructions

  1. Prepare the topping:
    • Preheat oven to 350°F (175°C).
    • Melt ¼ cup butter in a 9-inch round cake pan.
    • Sprinkle brown sugar evenly over the butter.
    • Arrange pineapple slices on top of the sugar. Place cherries in the centers if using.
  2. Make the cake batter:
    • In a bowl, whisk flour, baking powder, and salt.
    • In another bowl, cream ½ cup butter and 1 cup sugar until light.
    • Add eggs one at a time, then stir in vanilla.
    • Gradually add flour mixture alternating with milk, mixing until smooth.
  3. Assemble and bake:
    • Pour batter evenly over the pineapple slices.
    • Bake 35–40 minutes until a toothpick inserted comes out clean.
  4. Invert the cake:
    • Let the cake cool in the pan 5–10 minutes.
    • Run a knife around edges and carefully invert onto a serving plate.
  5. Serve:
    • Warm or at room temperature, optionally with whipped cream or ice cream.

🔥 Tips & Variations

  • Fruit alternatives: Apples, peaches, pears, or mixed berries.
  • Caramel flavor boost: Add a pinch of cinnamon or nutmeg to the brown sugar topping.
  • Mini cakes: Bake in muffin tins for individual servings.
  • Moist cake: Use pineapple juice in place of part of the milk.

Upside-down cakes are visually impressive, sweet, and caramelized, making them a perfect dessert for holidays, parties, or family gatherings.
