  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups crushed tortilla chips (or Doritos)
  • 1 cup salsa
  • 1 cup shredded cheddar cheese (or Mexican blend)
  • Optional toppings: sliced jalapeños, diced tomatoes, green onions, sour cream, avocado

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Cook the meat: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat. Add taco seasoning and 1/2 cup water, simmer for 3–5 minutes until thickened.
  3. Combine ingredients: In a large bowl, mix cooked meat, corn, black beans, salsa, and half of the crushed tortilla chips.
  4. Assemble: Spread the mixture evenly in the prepared baking dish. Sprinkle the remaining crushed chips on top, then top with shredded cheese.
  5. Bake: Bake for 15–20 minutes, or until the cheese is melted and bubbly.
  6. Serve: Top with your favorite walking taco-style toppings: sour cream, avocado, diced tomatoes, green onions, jalapeños, or extra salsa.

This is basically all the fun of a walking taco in a warm, cheesy casserole form. The crushed chips inside get slightly soft while the top stays crunchy—pure comfort food!
