Fun name! 🧙‍♀️ Here’s a festive, hearty version of “Witches Brew Stew” — perfect for fall or Halloween.


🧙‍♀️ Witches Brew Stew

(Hearty Beef & Vegetable Stew)

🥕 Ingredients

  • 1 lb stew beef (or chuck, cubed)
  • 2 tbsp olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 cups beef broth
  • 1 cup diced potatoes
  • 1 cup sliced carrots
  • 1 cup green beans (cut into pieces)
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • Salt & pepper to taste
  • Optional “witchy” add-ins: sliced mushrooms, corn, or a splash of Worcestershire sauce

🔮 Instructions

  1. Brown the “mystery meat”
    • Heat oil in a large pot.
    • Brown beef on all sides (5–7 minutes).
    • Remove and set aside.
  2. Build the brew
    • In the same pot, sauté onion and garlic until fragrant.
    • Add broth, tomatoes, herbs, and browned beef.
  3. Add the “cauldron vegetables”
    • Stir in potatoes, carrots, green beans (and mushrooms if using).
    • Bring to a boil, then reduce to a simmer.
  4. Simmer
    • Cover and cook 45–60 minutes until beef is tender.
    • Season with salt, pepper, and Worcestershire.
  5. Serve
    • Garnish with chopped parsley or a swirl of sour cream.
    • Serve with crusty bread.

🕷️ Fun Halloween Twist

  • Add black beans for a darker “brew.”
  • Use purple potatoes.
  • Float crescent roll “bone” shapes on top.
  • Label the pot with spooky names like “Toad Taters” or “Dragon Carrots.”
